Orange-Cranberry-Walnut Bread

RECIPE- ORANGE-CRANBERRY-WALNUT BREAD.JPG

Ingredients

2 C flour

1 C sugar

1/2 t salt

1-1/2 t baking powder

1/2 t baking soda

1 orange

2 T melted shortening

1 egg

Dried cranberries, rejuvenated in

boiling water, to make 1 C drained

1 C chopped walnuts

Preparation

Combine flour, sugar, salt, baking powder and baking soda in mixing bowl.

Grate the rind of the orange into a mixing cup, then squeeze the juice into the same cup, and finally add hot water to make 3/4 C total.

In separate bowl, beat the egg, then add in shortening and the orange mixture.

Add the liquid ingredients to the dry and mix well. Add in the cranberries and chopped walnuts.

Place batter in a greased and floured 9”x5” loaf pan and bake in preheated 325 degree oven. It’s done when a toothpick inserted in the center comes out clean, 45 to 60 minutes. Carefully turn out onto a wire rack to cool.
